thursday: ok, so i do spend a bit of time looking at pinterest. it’s my only social media outlet so when i am not feeling like doing anything else i resort to it. today i found a beautiful idea for a window “curtain”. i had 4 pretty hankies that my friend, shari, had given me and hung them up as i saw them online. i am so happy.
i took my camera out into the garden to enjoy the nice weather and take pictures of my yard. everything is flowering and growing again. it’s so wonderful to have plants all year round. phoenix is never gloomy.
did you ever make lasagne with pumpkin? i had never done this. it looked intriguing on pinterest (ok, yes, i spend too much time there). well, it was yummy. basically i made it how i usually do with ricotta and mozzarella cheeses. i typically sauté onions and spinach too. and instead of sauce, you use canned pumpkin, you just add milk to make it “saucy” and that’s it. well, i did cheat a bit, i used non-boil noodles, it’s so much easier. it was really delicious, i will make it again.
