monday: the morning starts with laundry. there are not as many dirty clothes because we’re not going anywhere and, quite frankly, we’re wearing the same things for a couple of days in a row. the most dirty clothes are shirts for jake, that’s because he’s doing video calls and gets dressed in a nice shirt, and his soccer shorts for work.

i also mended and added elastic to an old pair of my pants which i cannot part with, they are so comfortable.

cooking, it’s really fun to try things i never had before, you remember the other day we had pumpkin lasagne, well, there was left over pumpkin, so i made soup for lunch. sautéed onions and garlic, added veggie broth and pumpkin, some cumin, ginger and red pepper flakes. when it was finished simmering i added a handful of chopped peanuts and FINALLY got to try the preserved lemons that i made on the 19th. they were so soft and salted and tasted delicious in the soup.

i couldn’t stop there with my lemon fever, i decided to make irish soda bread. i usually use greek yogurt as a substitute for buttermilk. i did not have any, but i did have “oui” brand lemon yogurt. again i added the rind from the preserved lemon to the batter, as well as raisins and caraway seeds. it’s in the oven as i am writing this and smells so good.

i even managed to do two more paintings in the velvet photo album series (i will have to come up with a better name soon). this is mother (who by all accounts is surely a campbell according to my research on ancestry) and “jennie” coulter (see above) (her first name is actually camilla and she is also a campbell married to jesse coulter, i am speculating that she is mother’s daughter.)
